1 cup Flour
1-2 Eggs
1 cupBread crumbs (I prefer Panko but any fine bread crumb works)
½ cup Parmesan
1 tsp Italian Seasoning
Salt and Pepper
Fried Chicken Cutlets

Ingredients:
4 Chicken Breasts
Vegetable Oil
1 cup Flour
1-2 Eggs
1 cupBread crumbs (I prefer Panko but any fine bread crumb works)

Directions
Pound chicken breasts until thin and even
Put flour in a shallow bowl. Crack eggs into a second shallow bow. In a third shallow bowl add the bread crumbs, Parmesan cheese and Italian Seasoning
Salt and pepper each of the dredge ingredients (flour, eggs, and breadcrumb mixture)
Dredge chicken in flour, shake off access then dip in the eggs. Shake off the excess again then coat in the bread crumb mixture. Pressing the breadcrumbs into the chicken with your hands.
While dredging the chicken, heat vegetable oil in a large skillet over medium high heat. Oil should come up enough to cover half the height of your chicken cutlets
Place the breaded chicken cutlets into the heated oil. Fry for 3-4 minutes per side until the chicken reached 165F with a meat thermometer
